Easter Afternoon Tea

Hello there,

With Easter just around the corner we thought we would share with you some of the scrummy Easter themed afternoon teas that we have discovered this year.

First lets start with the sumptuous looking Easter afternoon tea on offer at The Landmark hotel in London....

On your sweet plate you'll find a white chocolate nest and a dark chocolate and praline egg to name some of the delights!

The Dorchester also have an Easter afternoon tea delight on offer....

This themed afternoon tea includes hot cross buns!

At Cafe Royal the chocoholics amongst us can indulge this Easter with their Easter Chocolate Afternoon tea....

This chocolate feast includes milk chocolate and violet operas and dark chocolate Easter eggs. You can also add a hot chocolate to your feast, picking from such delights as salted caramel and Black Forest!

Pastry Chef Ji Sun Shin has been creating masterpieces again....take a peek at the Easter afternoon tea that has been created at The Ampersand hotel....

This tea includes chocolate nests with coconut mousse and shortbread chicks.

The votings over....but which sandwich filling won?

Hello there,

Well, yesterday our latest poll closed...thank you to everyone who voted and joined in our various chats on Twitter and Facebook all about sandwich fillings!

We gave you quite a traditional choice of afternoon tea sandwich fillings to pick from....there was egg mayonnaise, cucumber, salmon, coronation chicken, ham or the option to pick "other". The firm favourite was egg mayonnaise with 32% of the votes, this was closely followed by cucumber at 24% and my personal favourite coronation chicken with 20% of the votes.


Afternoon tea sandwiches

So, how do you make a good egg mayonnaise sandwich...I'm by no means perfect, but this is what I do....

You will need:

  1. Two slices of white bread, buttered with the crusts cut off 
  2. One large egg
  3. A dollop of mayonnaise (I prefer full fat Heinz mayo, but you may have another favourite brand!)
  4. Seasoning (if you must)
So, I said it....white bread....yes, its not the most healthy variety (and I prefer full fat mayo for this sandwich!)...but if I'm honest I will always pick white bread for my egg sandwiches....it just tastes better!

What to do:
  1. You first need to boil your egg, I prefer a hard boiled egg for my sandwiches, but I know this will vary person to person so why not experiment with your boiling! 
  2. Once boiled, I peel the egg and leave it to cool (nothing worse than a hot egg mayonnaise sandwich!).
  3. Once cooled I mash my egg with a fork and then add a good dollop of mayonnaise. Now mix well. At this stage please add seasoning to taste, you could also add some chopped chives or a handful of cress if you fancy something a little bit different.
  4. You then need to top one piece of bread with your egg mixture, making sure you have egg from one side of the bread to the other (don't miss any bit out!). Once you are happy with your coverage, add the top slice of bread and press down (not too firmly or your filling will ooze from the sides!). 
  5. Now take a sharp knife and cut your sandwich into delicate fingers and enjoy!

What's your favourite sandwich filling?

Hello there and welcome back to Tea With Me and Friends!

We have recently started looking at the humble sandwich, and what part it plays in the afternoon tea feast. In our last article we looked at all the different types of sandwich you can now find within an afternoon tea....they have definitely evolved from the dainty finger sandwich traditionally served with tea.

We currently have a poll running on our side bar...we're interested in knowing what your favourite sandwich filling is. If you have voted yet we'd love to hear from you!

Egg mayonnaise sandwiches are always extremely popular at the afternoon teas that Lorna and I create for our friends. We have one friend in particular who is a really big fan....I'm not sure what she'd do if we served tea without them!

Are there any egg sandwiches in there?

I'm quite partial to coronation chicken sandwiches at tea....a filling that I do not usually have in my sandwiches, so its a lovely treat.

Today's sandwich menu at tea can be so diverse, with venues moving away from the more traditional fillings like egg mayonnaise, cucumber or salmon. Whats the most unusual sandwich filling you've come across? Leave us a comment and let us know!
